Everyone is making banana bread right now, but how about banana bread baked oatmeal for one?! I realized that I always make my baked oatmeal recipes made for 4 servings and sometimes you may just want one 🤷‍♀️ also, this is so good you could easily make this as a healthier dessert 😋 I highly suggest adding some chocolate chips directly after removing from the oven because it created a super yummy melted chocolate center. I used @simpletruth4u (Kroger’s organic line) allergy friendly vegan chocolate chips as well as a spoonful of @revivalfoodco coco love almond butter. Enjoy!

  • 1 very ripe banana, mashed
  • 1/2 cup nondairy milk (oat is my favorite)
  • 1/3 cup old fashioned rolled oats
  • 1/2 TBSP chia seeds
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • Toppings: chocolate chips and your favorite nut butter!
Preheat the oven to 375. Combine all ingredients in a bowl until well mixed. Pour into a greased individual pie pan or whatever tiny pan you have (if you have no little pans, pouring into a couple muffin tin holes would work). Bake for 30 minutes, top with your desired toppings, and enjoy!
